Longfin Tuna Salad

- 1
– 1 ½ lbs. Longfin Albacore, cut into steaks
- 1
tablespoon dijon mustard
- 1
large bermuda onion, diced
- 1
stalk celery, diced
- 1
jalapeno pepper, diced (optional)
- 1/3
medium red bell pepper, diced
- 1
large yellow onion, sliced
- 1
medium half sour or dill garlic pickle, diced
- ½
teaspoon coarse salt
- ½
teaspoon black pepper
- ½
teaspoon red pepper flakes
- mayonnaise
to taste

Place the Tuna steaks in large skillet and cover with the yellow onion slices.
Poach the Tuna until you can flake with a fork with minimal effort.
Set aside to cool & drain.
Mix all of the other ingredients in a large mixing
bowl (note: start with a ½ cup of mayonnaise and adjust to taste).
Flake the Tuna.
Gently add the flaked Tuna to the mixed ingredients.
Chill & enjoy some awesome sandwiches.
